IVCCD partners with Tremont for Culinary Apprenticeship program

Iowa Valley Grinnell launched its Culinary Apprenticeship program last fall and the Tremont on Main jumped at the opportunity to partner with the College and become an apprenticeship site.

“I’ve been very pleased with the program so far,” says JP Howard, owner and proprietor of the Tremont On Main. JP and his wife, Jennifer, have owned the Tremont in Marshalltown since 1998 when the two purchased the historical building and began renovations. “I’ve actually begun asking for additional apprentices. My vision is to create three phases to the apprenticeship: first year, second year, and third year.”

Classroom and laboratory time is paired with paid work over three years. Students have been busy with apprenticeships since last fall. Missy Butcher is currently the apprentice at the Tremont. Other Apprenticeship sites include: Legends, Relish (Grinnell), Saint Francis Manor, and others.

“Missy is positive, hard-working, and genuinely happy. Those are great ingredients for a team member,” adds Howard. “We feel responsible for her being successful. And I believe we have already begun to achieve that.”

Classes take place on Mondays at the Grinnell College catering kitchen and the Iowa Valley Grinnell campus. This Associate of Applied Science degree includes courses such as menu planning, beverage control, food cost accounting, and various food preparations and baking.

“We are a family-owned business, focused on team-building. My ultimate goal for this program is to get to the point where the students are teaching each other on a daily basis.”

The Tremont added a second restaurant, The Tremont Grille, in 2003, and the hotel, Tremont Inn, in 2005. As a mixed use, historic tax credit revitalization project, the Tremont also has business offices and condominium residences in addition to the Inn and restaurants.
